Directions:

Step 1: Begin your baking journey by whisking together the all-purpose flour, cream of tartar, kosher salt, and baking soda in a medium-sized bowl. Ensure they are well combined. In a separate large bowl, using a handheld mixer on medium-high speed, beat the room-temperature butter and 1 1/4 cups of granulated sugar until they form a creamy, delightful mixture. One at a time, add the eggs, beating after each addition to blend them seamlessly into the mix. Stir in the pure vanilla extract. Now, gently add the dry ingredients to the mixture and beat on low speed just until they are incorporated. Cover the dough and refrigerate it until it’s nicely chilled, which will take at least 1 hour or you can leave it in the fridge overnight for even better flavor development.

Step 2: While you’re patiently waiting for the dough to chill, preheat your oven to a cozy 350°F. Line two baking sheets with parchment paper to prepare them for the cookie-baking adventure. In a small bowl, whisk together the ground cinnamon and the remaining 1/4 cup of granulated sugar.

Step 3: As the oven reaches its desired temperature, it’s time to shape the cookies. Using a medium cookie scoop (about 2 tablespoons in size), scoop portions of dough and roll them into delightful balls. Take each dough ball and generously coat it in the cinnamon-sugar mixture, ensuring it’s evenly covered. Arrange the coated dough balls on the prepared baking sheets, spacing them about 2 inches apart.

Step 4: With your cookies all set and ready, bake them in the preheated oven. Keep a watchful eye as they bake until they become puffed and their edges are just set, typically taking around 10 to 12 minutes. After removing them from the oven, allow the cookies to cool on the baking sheets for 5 minutes. Then, transfer them to a wire rack to cool completely.

These Snickerdoodles are a timeless classic, delivering a cozy blend of cinnamon and sugar in every bite. Enjoy them with a glass of milk, a hot cup of coffee, or simply as an anytime treat. Happy baking!
