Radicchio salad is a delicious and nutritious dish made from a type of Italian chicory called radicchio. Radicchio has a slightly bitter taste and a vibrant red-purple color, which makes it a popular ingredient in salads.

Here is a simple recipe for radicchio salad :

Ingredients:

  • 1 head of radicchio, washed and dried
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup balsamic vinegar

Instructions:

  1. Cut the radicchio into quarters and remove the core. Slice each quarter into thin strips.
  2. In a small bowl, whisk together the olive oil and balsamic vinegar. Season with salt and pepper to taste.
  3. In a separate dry pan over medium heat, toast the walnuts until they are lightly browned and fragrant. Remove from heat and set aside.
  4. In a large bowl, toss the sliced radicchio with the dressing until it is evenly coated.
  5. Sprinkle the toasted walnuts and crumbled blue cheese over the top of the salad. Serve immediately.

This salad makes a great side dish for any meal and is especially delicious when served alongside grilled meats or roasted vegetables. Enjoy!
