Prosciutto and Brie Asparagus Pastry Pockets

Ingredients:

  • 6 tablespoons of melted butter
  • 1 tablespoon of honey
  • 1/4 teaspoon of kosher salt
  • 1 bunch of pencil asparagus, ends trimmed

  • 2 sheets of puff pastry, thawed according to package directions
  • 12 slices of prosciutto
  • 8 ounces of wheel brie, cut into 12 pieces

Directions:

  • Begin by preheating your oven to 400°F (200°C) and lining two large baking sheets with parchment paper. In a small bowl, mix together the melted butter, honey, and kosher salt.
  • In a medium-sized bowl, toss the trimmed asparagus with the extra-virgin olive oil until they are well coated.
  • On a lightly floured surface, roll out each sheet of puff pastry one at a time until it forms a 15” x 10” rectangle. Then, cut each sheet into 6 squares, resulting in a total of 12 squares.
  • Rotate each square to form a diamond shape, and brush them with the butter mixture. Place a slice of prosciutto on top, folding it as needed to fit within the square. Add a few pieces of asparagus and a slice of brie. Fold the left side over the top and brush it with egg wash. Then, fold the right side over, ensuring the top and sides are brushed with more egg wash. Finally, sprinkle some freshly ground black pepper on top. Repeat this process with the remaining puff pastry squares.
