Peanut Butter Balls, also known as Buckeye Balls, are a delicious treat made with a mixture of peanut butter, powdered sugar, and butter, dipped in melted chocolate. Here’s a simple recipe to make them:

Ingredients:

  • 1 1/2 cups creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 3 1/2 cups powdered sugar
  • 1/2 teaspoon salt
  • 12 ounces semisweet chocolate chips
  • 1 tablespoon vegetable shortening

Instructions:

  • In a large bowl, beat the peanut butter, butter, and vanilla extract together until smooth.
  • Add the powdered sugar and salt to the mixture and mix until well combined.
  • Using your hands, roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Freeze the balls for at least 30 minutes.
  • Melt the chocolate chips and vegetable shortening in a double boiler or microwave, stirring frequently until smooth.
