Here’s a recipe for homemade Magnum-style ice cream bars:

Ingredients:

  • 2 cups of chocolate chips (milk, dark, or a combination)
  • 1/4 cup of coconut oil
  • Ice cream of your choice (vanilla, chocolate, strawberry, etc.)
  • Popsicle sticks or wooden skewers

Instructions:

  1. Line a baking sheet or tray with parchment paper and set it aside.
  2. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth. Alternatively, you can melt the chocolate and coconut oil in a double boiler over simmering water.
  3. Take the ice cream out of the freezer and let it soften slightly at room temperature for about 5-10 minutes.
  4. Once the ice cream has softened, insert a popsicle stick or wooden skewer into each ice cream bar. Place the bars on the prepared baking sheet.
  5. Carefully dip each ice cream bar into the melted chocolate mixture, coating it completely. Allow any excess chocolate to drip off.
  6. Place the coated ice cream bars back onto the baking sheet and return them to the freezer. Freeze for at least 2 hours, or until the chocolate coating is firm.
  7. Once the ice cream bars are fully frozen, they are ready to enjoy! You can store them in an airtight container or wrap them individually in plastic wrap for future enjoyment.
