  • 2 cups all-purpose flour
  • ⅓ cup white sugar
  • 2 teaspoons baking powder
  • Zest of 1 lemon
  • ¼ teaspoon salt
  • ¼ teaspoon baking soda
  • ½ cup cold butter, cubed
  • 1 cup fresh blueberries
  • ½ cup heavy cream
  • 1 large egg
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons heavy cream

Lemon Glaze (Optional):

  • ¼ cup powdered sugar
  • 1 ½ teaspoons fresh lemon juice

Directions:

  1. Preheat and Prepare: Preheat the oven to 400 degrees F (200 degrees C). Line 2 baking sheets with parchment paper and set aside.
  2. Prepare Dry Ingredients: In the bowl of a food processor, combine flour, sugar, baking powder, lemon zest, salt, and baking soda. Pulse 3 or 4 times to mix. Add cold cubed butter and pulse until the mixture resembles coarse crumbs, around 20 to 25 times. Transfer the mixture into a large bowl.
  3. Incorporate Blueberries: Gently fold in the fresh blueberries, ensuring they are evenly coated with the dry ingredients.
  4. Prepare Wet Ingredients: In a small bowl, whisk together ½ cup of heavy cream, egg, and fresh lemon juice until smooth.
  5. Combine and Shape: Stir the wet ingredients into the flour mixture until slightly moistened. Turn the dough out onto a well-floured surface. Using floured hands, gather the dough into a circle and knead it slightly to incorporate any remaining dry ingredients. Flatten the dough into a 9-inch round disc and cut it into 8 triangles.
  6. Bake: Transfer the shaped scones onto the prepared baking sheets, placing 4 scones per sheet. Brush the tops of the scones with 2 tablespoons of heavy cream. Bake in the preheated oven until light brown, about 20 to 23 minutes. Once baked, remove from the oven and allow them to cool completely, approximately 30 minutes.
  7. Optional Glaze: If desired, prepare the lemon glaze by mixing powdered sugar and lemon juice in a small bowl. Transfer the glaze into a small resealable plastic bag, snip off a corner, and drizzle the cooled scones with the glaze.
