What You’ll Need
For this delicious dish, you will need 4 fresh salmon fillets, 8 ounces of crab meat, 1/4 cup of green onions, 2 tablespoons of butter, 2 tablespoons of all-purpose flour, 1 cup of chicken broth, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Additionally, you will need 1/2 cup of heavy cream, 2 tablespoons of freshly squeezed lemon juice, and 2 tablespoons of chopped fresh parsley. To garnish the dish, you will need a few additional sprigs of parsley.

the method

  1. Preheat the oven to 400 degrees F.
  2. Start by preparing the salmon. Cut four 6-ounce portions of salmon and lightly season with salt and pepper.
  3. In a medium bowl, combine the cooked crabmeat, red pepper, garlic, shallots, parsley, lemon juice, and butter. Stir until combined.
  4. Stuff each piece of salmon with the crab mixture.
  5. Place the stuffed salmon in a lightly greased baking dish and bake for 20 minutes.
  6. While the salmon is baking, prepare the lobster sauce. In a small saucepan, melt the butter over low heat. Add the shallots, garlic, and white wine and simmer for 5 minutes.
  7. Add the lobster stock, cream, and parsley and bring to a low simmer. Simmer for 10 minutes until slightly thickened.
  8. When the salmon is done, remove from the oven and plate with a spoonful of the lobster sauce on top. Garnish with fresh parsley if desired and serve! Enjoy!
