  • 1 cup dried chickpeas
  • 1/2 small white onion, coarsely chopped
  • 4 cloves garlic, coarsely chopped
  • 1/4 cup fresh cilantro, coarsely chopped

  • 1/4 cup fresh parsley, coarsely chopped
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon baking powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/4 cup all-purpose flour
  • Vegetable oil, for frying (approximately 6 to 8 cups)
  • Tahini sauce, for serving

Follow these steps to craft this delectable falafel creation:

Step 1: Begin by pouring the dried chickpeas into a large bowl and adding cold water to cover them by at least 2 inches. Cover the bowl and place it in the refrigerator overnight for the chickpeas to soak.

Step 2: After soaking, drain the chickpeas thoroughly and pat them dry. Transfer them to a food processor and pulse until the chickpeas are partially broken down. Add the coarsely chopped onion, garlic, cilantro, parsley, kosher salt, baking powder, ground coriander, and ground cumin. Continue pulsing until the mixture is finely chopped but not overly pasty. Sprinkle the all-purpose flour over the mixture and pulse just until the ingredients are combined.

Step 3: Portion the chickpea mixture into 1-inch balls (about 2 tablespoons each) using a 1-ounce cookie scoop or two spoons. With clean hands, gently roll each ball between your palms, lightly squeezing to create a smooth and compact texture. Even though the mixture may feel moist, this is perfectly normal. Place the formed balls on a clean plate or a parchment-lined baking sheet.

Step 4: In a large, heavy pot fitted with a deep-fry or candy thermometer, pour vegetable oil to a depth of 2 inches. Heat the oil over high heat until the thermometer registers 350°F. Prepare a wire rack on a large baking sheet to cool the fried falafels. Fry 6 to 7 falafels at a time, carefully lowering them into the oil. Fry until they are deeply browned on all sides, which generally takes around 2 to 3 minutes. Adjust the heat as needed to maintain the oil temperature.

Step 5: Use a slotted spoon to remove the fried falafels from the oil and transfer them to the prepared wire rack to cool. Serve these delightful falafels warm, accompanied by the velvety richness of tahini sauce.

Experience the mouthwatering delight of Homemade Chickpea Falafel with Tahini Sauce – a perfect blend of textures and flavors that’s perfect for sharing or savoring on your own.
