  • 1 tbsp Oyster Sauce
  • 1 tbsp Fish Sauce
  • 1 tbsp Soy Sauce
  • 1 tbsp Palm Sugar
  • 1 tbsp Grated Ginger
  • 1 tbsp Grated Garlic
  • 3 tbsp Warm Water
  • 2 tbsp XO Sauce

For the Noodles:

  • Thick Rice Noodles (Thai)
  • Dried Tofu or Fish Tofu
  • Egg
  • Dried Shrimp (soaked overnight)
  • Chinese Sausage (steamed)
  • Oil
  • Spring Onion

Instructions of Cry Baby Noodles Recipe :

Step 1: Begin by preparing the Cry Baby Sauce. In a small bowl, thoroughly mix together soybean paste, oyster sauce, fish sauce, soy sauce, palm sugar, grated ginger, grated garlic, warm water, and XO sauce. Set this flavorful sauce aside.

Step 2: Heat a spacious skillet or wok over medium heat. Add a small amount of oil and gently stir-fry the soaked dried shrimp, steamed Chinese sausage, and tofu until lightly cooked. Be mindful not to overcook or use excessive oil to maintain the dish’s perfect texture. Once lightly cooked, remove these ingredients from the skillet and set them aside.

Step 3: Discard the oil used for stir-frying the shrimp, sausage, and tofu. In the same skillet, heat a few tablespoons of fresh oil over medium heat. Add the prepared Cry Baby sauce to the hot oil, stirring briefly to release its enticing aromas.
