Cranberry-Mimosa Breakfast Cake

Ingredients:

  • Cooking spray
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 3/4 cups (350 grams) granulated sugar, plus extra for serving
  • 2 tablespoons finely grated orange zest (from about 2 large navel oranges), plus extra for serving
  • 2 large eggs
  • 2 large egg yolks
  • 4 cups (480 grams) cake flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon kosher salt

  • 1 cup fresh orange juice (from about 2 large navel oranges)
  • 1/2 cup plain Greek yogurt
  • 1/2 cup brut Prosecco
  • 12 ounces fresh or frozen cranberries (about 3 cups), divided

Directions:

Step 1: Prepare the Pan
Preheat your oven to 350°F (175°C). Grease a 13″x9″ baking pan with cooking spray, then line it with parchment paper, leaving a 2″ overhang on both long sides. Grease the parchment paper with cooking spray as well.

Step 2: Prepare the Batter
In a large bowl of a stand mixer fitted with the paddle attachment (or using a handheld mixer in a large bowl), beat the softened butter and 1 1/2 cups of granulated sugar on medium-high speed until the mixture becomes light and fluffy, which should take about 5 minutes. Scrape down the sides of the bowl as needed. Add 1 tablespoon of orange zest and beat on medium-low speed until just combined. Add the eggs and egg yolks, one at a time, beating to blend after each addition.

Step 3: Combine Dry and Wet Ingredients
In a separate medium-sized bowl, whisk together the cake flour, baking powder, salt, and baking soda. Add half of the dry ingredients to the butter mixture and beat on low speed until just combined. Then, add the orange juice and yogurt, beating on medium speed until most of the liquid is incorporated. Finally, add the brut Prosecco and the remaining dry ingredients, beating on low speed until just incorporated. It’s okay if there are a few small lumps. Ensure there are no dry spots by scraping the bottom of the bowl. Fold in 2 cups of cranberries.

Step 4: Bake the Cake
Pour the cake batter into the prepared pan and sprinkle the remaining 1 cup of cranberries on top. In a small bowl, combine 1/4 cup of sugar and 1 tablespoon of orange zest, then sprinkle this mixture evenly over the top of the batter.

Step 5: Bake and Garnish
Bake the cake until it turns golden brown and a tester inserted into the center comes out clean. This should take approximately 50 to 55 minutes. Let the cake cool in the pan, and then sprinkle it with additional sugar and orange zest before serving.
