Copycat Steak ‘N Shake Frisco Melt

Ingredients:

  • 1 large yellow onion, thinly sliced
  • 5 tablespoons unsalted butter, divided
  • Kosher salt
  • 2 tablespoons store-bought French dressing
  • 2 tablespoons store-bought Thousand Island dressing
  • 1/4 teaspoon Worcestershire sauce
  • 4 slices sourdough bread
  • 1 pound (80% lean) ground beef
  • 2 slices American cheese
  • 2 slices Swiss cheese

Directions:

Step 1
Start by caramelizing the onions. In a medium saucepan over medium-low heat, combine the thinly sliced onions and 3 tablespoons of water. Cover the pan and let the onions cook for 10 minutes. Then, uncover, reduce the heat to low, and continue to cook while stirring frequently. Cook until the onions start to slightly brown on the bottom of the pan, which should take about 5 minutes. Add 1 more tablespoon of water and continue cooking, stirring frequently, until the onions have reduced in size and become a deep golden brown, which will take approximately 15 more minutes. Remove from heat, stir in 1 tablespoon of butter, and season with salt.

Step 2
In a small bowl, mix together the French dressing, Thousand Island dressing, and Worcestershire sauce until well combined. In a large skillet over medium-low heat, melt 2 tablespoons of butter. Add 2 slices of sourdough bread and let them absorb the butter. Toast one side of the bread until it turns golden brown, about 2 minutes. Transfer the toasted bread to a plate. Repeat the same process with the remaining 2 tablespoons of butter and 2 slices of bread.

Step 3
Spread the dressing mixture on one side of 2 slices of toasted bread. On the remaining 2 slices of bread, arrange the caramelized onions.

Step 4
Shape the ground beef into 4 (4-ounce) balls. Heat the same skillet over medium-high heat until it’s very hot. Add one of the meat balls and use the back of a spatula to smash it until it forms a thin patty. Season it with salt and cook until it’s just browned, about 1 minute. Flip the patty and continue cooking until the second side is browned, also about 1 minute. Flip it once more and cook until the edges become crispy and browned, about 1 more minute.

Step 5
Place 1 slice of American cheese and 1 slice of Swiss cheese on top of 2 of the beef patties. Carefully place the remaining 2 patties on top of the cheese. Cover the skillet and cook until the cheese is melted, which should take about 1 minute.

Step 6
Now, place a cheese-covered patty on top of the caramelized onions.

Step 7
In the same skillet over medium heat, cook the sandwiches, turning them once, until the bread is toasted and the sandwiches are warmed through, approximately 1 minute per side.
