  • 1 tablespoon plus 2 teaspoons of yellow mustard
  • 1/4 teaspoon of garlic powder
  • 1/4 teaspoon of paprika (hot, smoked, or sweet)
  • 1/8 teaspoon of cayenne (optional)
  • 3 tablespoons of melted butter
  • Vegetable oil (for frying)
  • 4 Martin’s potato rolls
  • 2 pounds of ground beef, divided into 8, 4-ounce balls
  • Kosher salt
  • Freshly ground black pepper
  • 8 slices of American cheese
  • Sliced tomato (for topping)
  • Green leaf lettuce (for topping)

Directions:

Step 1: Preparing the Special Sauce
Start by adding mayonnaise, finely chopped pickle chips, ketchup, yellow mustard, garlic powder, paprika, and cayenne (if desired) into a blender. Blend until the mixture is completely smooth. Set this special sauce aside for later use.

Step 2: Toasting the Buns
Heat a large, heavy-bottomed skillet or griddle over medium heat. Carefully separate the tops and bottoms of the Martin’s potato rolls without breaking the “hinges.” Working in batches, brush the insides of the roll tops and bottoms with melted butter. Toast them in the skillet until they turn a delightful golden brown, which should take about 2 to 3 minutes. Once toasted, remove the rolls and increase the heat to medium-high.

Step 3: Preparing the Patties
Working in batches, add ½ teaspoon of vegetable oil to the hot skillet and heat it until it shimmers. Season the top of 2 ground beef balls generously with kosher salt and freshly ground black pepper, then place that side into the hot skillet.

Step 4: Smashing and Cooking the Burgers
Using a large spatula or press, gently smash the burgers until they are a little less than ¼ inch thick. Sprinkle additional salt and pepper on top for added flavor. Cook the patties for 1 to 2 minutes or until a rich, browned crust forms.

Step 5: Melting the Cheese
Flip each patty and immediately top them with a slice of American cheese. Continue cooking until the bottom forms a crust and the cheese melts, which should take an additional 1 to 2 minutes.

Step 6: Assembling the Burgers
While the burgers cook, spread a generous amount of the special sauce on the inside of the top bun. Place the 2 patties on the bottom bun, followed by a leaf of green lettuce and 2 slices of tomato.

Step 7: Serving
Wrap the assembled burger in wax paper to keep it together and serve immediately. Repeat the process to prepare the remaining 3 burgers.

Enjoy your homemade American Cheeseburgers with all the classic flavors and a delightful special sauce that takes this dish to the next level.
