Chocolate Pecan Turtle Clusters

Ingredients:

  • 1 cup pecan halves
  • 1 cup caramel candies, unwrapped
  • 1 cup semisweet chocolate chips

Instructions:

  • Preheat your oven to 350°F (175°C). Place the pecan halves on a baking sheet and toast them in the oven for about 5 minutes until they become fragrant. Keep an eye on them to prevent burning. Remove from the oven and set aside.
  • Line another baking sheet with parchment paper or a silicone baking mat.
  • Take a small saucepan and fill it with a few inches of water. Place it on the stove over medium heat and bring the water to a simmer. Find a heatproof glass or metal bowl that fits securely on top of the saucepan, creating a double boiler.
  • Put the caramel candies into the heatproof bowl and place it over the simmering water. Stir occasionally until the caramels are completely melted and smooth.
  • Remove the bowl from heat. Using a spoon, drop small clusters of melted caramel onto the prepared baking sheet, spacing them apart to allow room for the chocolate.
  • Immediately press a toasted pecan half into the center of each caramel cluster. Let them cool and set completely, which usually takes around 20-30 minutes.

  • Once the caramel clusters are firm, prepare the chocolate. You can use the same double boiler method as before, or melt the chocolate chips in the microwave in short bursts, stirring between each burst until smooth.
  • Spoon a small amount of melted chocolate over each caramel-pecan cluster, covering it completely. You can also use a fork to dip each cluster into the melted chocolate, allowing the excess to drip off before placing it back on the baking sheet.
  • If desired, sprinkle a pinch of sea salt over the top of each cluster while the chocolate is still wet. This adds a delightful contrast to the sweetness.
  • Allow the chocolate to cool and harden completely. You can place the baking sheet in the refrigerator for quicker setting.
