Ingredients:

  • 2 cups cooked and shredded chicken
  • 1/2 cup salsa
  • 1/2 cup shredded cheese
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 12-15 small corn tortillas

Instructions:

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the shredded chicken, salsa, shredded cheese, cilantro, cumin, chili powder, salt, and pepper. Mix well.
  • Warm the tortillas in the microwave for about 30 seconds, until they are pliable.
  • Spoon 2-3 tablespoons of the chicken mixture onto each tortilla and roll up tightly.
