Ingredients:

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon butter
  • 1 tablespoon minced garlic
  • Salt and pepper
  • 1/2 cup sliced mushrooms
  • 1/4 cup chopped fresh parsley

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until browned on both sides and cooked through, about 6-7 minutes per side. Remove from skillet and keep warm.
  2. In the same skillet, add the garlic and mushrooms and cook until the mushrooms are browned and the garlic is fragrant, about 3-4 minutes.
  3. Add the chicken broth to the skillet and stir, scraping the browned bits from the bottom of the pan.
