Here’s a recipe for a delicious and easy chicken burrito :

Ingredients:

  • 1 lb. boneless, skinless chicken breast, cut into small pieces
  • 1 tbsp. vegetable oil
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • 1/2 tsp. garlic powder
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1 can (15 oz.) black beans, drained and rinsed
  • 1 cup cooked rice
  • 1/2 cup salsa
  • 4 large flour tortillas
  • Optional toppings: shredded cheese, sour cream, guacamole, diced tomatoes, chopped cilantro

Instructions:

  1. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and season with cumin, chili powder, garlic powder, salt, and black pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  2. Add the black beans, rice, and salsa to the skillet with the chicken. Stir until everything is well combined and heated through.
  3. Warm the flour tortillas in the microwave for about 10-15 seconds.
  4. Divide the chicken and rice mixture evenly among the tortillas, placing it in the center of each tortilla.
  5. Add any optional toppings that you like, such as shredded cheese, sour cream, guacamole, diced tomatoes, and chopped cilantro.
  6. To roll up the burritos, fold in the sides of the tortilla first, then fold the bottom up over the filling, and continue rolling until the burrito is completely wrapped up.
  7. Serve the chicken burritos immediately and enjoy!
