Chicken and Tomato Stuffed Bell Peppers Recipe

Ingredients:

  • 1 tablespoon extra-virgin olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 2 cups cherry tomatoes, halved
  • 2 1/2 cups shredded mozzarella cheese, divided
  • 3/4 cup ricotta cheese
  • 1/3 cup shredded fresh basil, plus extra for garnish
  • 2 cloves garlic, minced
  • 4 bell peppers, halved with seeds removed
  • 1/2 cup low-sodium chicken broth
  • Balsamic glaze, for drizzling

Directions:

  • Preheat Oven and Sear Chicken: Begin by preheating your oven to 350°F. In a large skillet over medium heat, heat the extra-virgin olive oil. Season the chicken breasts with Italian seasoning, kosher salt, and freshly ground black pepper. Cook the chicken until it turns golden and is no longer pink in the middle, approximately 8 minutes per side. Once cooked, transfer the chicken to a cutting board and allow it to rest for 5 minutes before dicing it into small pieces.
  • Prepare Tomato and Chicken Mixture: In a large mixing bowl, combine the halved cherry tomatoes, diced chicken, 1 1/2 cups of shredded mozzarella, ricotta cheese, shredded fresh basil, and minced garlic. Season the mixture with salt and pepper to taste. This mixture will serve as the filling for your bell peppers.
  • Stuff Bell Peppers: Carefully stuff each of the halved bell peppers with the tomato and chicken mixture. Be generous with the filling. Sprinkle the tops of the stuffed peppers with the remaining 1 cup of shredded mozzarella cheese.

  • Add Chicken Broth and Bake: Pour the low-sodium chicken broth into the baking dish around the stuffed bell peppers. This will create steam while baking. Cover the dish with foil.
  • Bake to Perfection: Place the covered baking dish in the preheated oven and bake for approximately 40 to 45 minutes, or until the bell peppers become tender, and the cheese on top turns delightfully melty and golden.
