  • In a medium-sized bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In a larger mixing bowl, combine oil, sugar, and brown sugar. Add eggs one at a time, followed by the vanilla extract, mixing well after each addition. Add applesauce and apple cider.
  • Add the dry ingredient mixture to the wet ingredients, folding together until just combined. Gently fold in the diced apples, ensuring even distribution.
