Icing:

  • 3/4 cup of powdered sugar
  • 4 teaspoons of fresh lemon juice
  • A pinch of apple pie spice

Directions:

Cookie Dough:

Step 1: Kickstart your baking adventure by preheating your oven to a toasty 350°F. Line two large baking sheets with parchment paper to prepare them for the upcoming cookie creations.

Step 2: In a medium bowl, whisk together the all-purpose flour, apple pie spice, baking soda, and kosher salt. Ensure that these dry ingredients are well combined and set them aside for now.

Step 3: In the bowl of a stand mixer, fitted with the whisk attachment, beat the softened butter, granulated sugar, and brown sugar on medium speed. Continue this delightful whisking process until the mixture becomes light and fluffy, which typically takes about 2 minutes. Add the large egg and mix until it’s fully incorporated. Then, introduce the pure vanilla extract to the mix. Now, it’s time to bring the dry ingredients into the mix. Add them to the butter mixture and beat until everything comes together beautifully. Stir in the grated apple until it’s just combined. Cover the dough and allow it to chill in the refrigerator until it becomes wonderfully cold, which should take around 30 minutes.

Step 4: With your chilled dough ready, use a scoop to form 2-tablespoon-sized balls (approximately 20 balls in total). Place these dough balls on your prepared baking sheets, ensuring they are spaced about 2 inches apart. Bake these delectable morsels until they are just set and have a light golden brown appearance, typically taking around 14 to 18 minutes. Once they’re out of the oven, let them cool completely.

Icing:

Step 1: In a small bowl, whisk together the powdered sugar and fresh lemon juice. To reach the desired consistency, add water one teaspoon at a time until the icing becomes thick but still pourable.

Step 2: Spoon this delightful icing over your cooled cookies, allowing it to gently cascade over each one. Let the icing set for about 15 minutes.

Step 3: For those who like to plan ahead, these cookies can be made up to 2 days ahead of time. Simply store them in an airtight container at room temperature to preserve their delightful flavor.

These Apple Pie Cookies are a perfect blend of sweet, tart, and comforting flavors. Share them with loved ones or savor them as a personal indulgence, and enjoy the essence of apple pie in a delightful cookie form. Happy baking!
