For the Beef Filling:

  • 2 lb ground beef round (85/15)
  • ½ cup finely chopped yellow onion (from 1 small [6 oz] onion)
  • ½ cup chopped poblano chile (from 1 medium [4 oz] chile)
  • 1 (1-oz) packet taco seasoning
  • ¾ tsp kosher salt

For the Creamy Topping:

  • ¾ cup mayonnaise
  • ¾ cup sour cream
  • ½ tsp smoked paprika
  • 8 oz pepper Jack cheese, shredded (2 cups), divided
  • 8 oz sharp Cheddar cheese, shredded (2 cups), divided

For the Topping:

  • 1 (15-oz) can fire-roasted diced tomatoes, drained
  • 1 (4-oz) can diced green chiles, drained

Directions:

  1. Prepare Biscuit Base:
    • Preheat oven to 350°F. Lightly coat a 9 x 13-inch baking dish with cooking spray.
    • In a medium bowl, stir together the biscuit mix and seasoning packet with water until combined.
    • Spread the mixture into the prepared baking dish.
    • Bake in the preheated oven until just starting to turn golden brown, about 10 to 12 minutes. Remove from oven and set aside.
  2. Cook Ground Beef:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add the beef in large chunks and cook undisturbed until well browned on one side, about 3 minutes. Stir and continue to cook, stirring occasionally, until almost cooked through but still a bit pink, about 5 more minutes.
    • Add the onion and poblano chile. Cook, stirring occasionally and breaking beef into small pieces, until the beef is cooked through and onions start to soften, about 3 more minutes.
    • Stir in taco seasoning and salt. Remove from heat.
  3. Make Creamy Topping Mixture:
    • In a medium bowl, mix together mayonnaise, sour cream, and smoked paprika.
    • Stir in 1 cup of pepper Jack cheese and 1 cup of Cheddar cheese.
  4. Assemble Casserole:
    • Spoon the beef mixture evenly over the par-cooked biscuit base in the baking dish.
    • Dollop spoonfuls of diced tomatoes and green chiles on top of the beef.
  5. Add Cheese Mixture:
    • Spoon the creamy mayonnaise mixture over the beef and vegetables. Gently spread it to cover.
  6. Add Remaining Cheese:
    • Sprinkle the remaining pepper Jack and Cheddar cheese evenly on top.
  7. Bake:
    • Bake until the cheese is melted and starting to turn brown in spots, and the mixture is bubbling around the edges, about 30 minutes.
    • Remove from the oven and let sit for 10 minutes before serving.

Conclusion:

This Cheesy Taco Biscuit Casserole is a fantastic fusion of classic taco flavors and gooey, cheesy goodness. The biscuit base provides a hearty foundation for the savory beef and creamy toppings, making it a satisfying meal for any occasion. Whether you’re feeding a crowd or enjoying a cozy family dinner, this casserole is sure to become a favorite. Enjoy the rich, comforting flavors and the delightful blend of textures in every bite!
