What you need:

  • 2 cups small diced fresh strawberries
  • 1 cup old fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/3 cup light brown sugar
  • 6 tablespoons unsalted butter, melted
  • 1 tablespoon freshly-squeezed lemon juice
  • 1 tablespoon granulated sugar
  • 1 teaspoon cornstarch
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon kosher salt

Mix together the rolled oats, flour, brown sugar, ginger and kosher salt in a medium bowl. Stir in the melted butter and mix until ingredients are well-combined. Take 1/2 cup of the mixture to set aside. Press the rest in an 8×8 inch baking pan lined with parchment paper.

Arrange half of the strawberries over the crust, top with cornstarch, lemon juice and 1/2 tablespoon of granulated sugar. Scatter remaining berries and reserved crumble on top. Bake in a pre-heated oven (375F) until golden and fruit is bubbly, around 35-40 mins. Refrigerate to cool completely. When ready, slice into bars and enjoy!
