Flourless chocolate cake

Ingredients:

  • 8 oz. bittersweet chocolate, chopped
  • 1/2 cup unsalted butter, cut into pieces
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
  2. In a double boiler or heatproof bowl set over a pot of simmering water, melt the chocolate and butter together, stirring occasionally.
  3. Remove the bowl from the heat and whisk in the sugar.
  4. Add the eggs one at a time, whisking well after each addition.
  5. Sift in the cocoa powder and salt and whisk until the batter is smooth.
  6. Pour the batter into the prepared pan and bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before removing it from the pan and placing it on a wire rack to cool completely.
